Collagen Breakfast Bowl Recipe




  • 4 slices bacon
  • 410 g cubed butternut squash
  • 2 small courgette or yellow squash (sliced)
  • 90 g dark leafy greens of choice
  • 2 fried eggs
  • 1 ripe avocado (sliced)
  • (optional for topping) coriander or microgreens
  • 2 scoops Vital Proteins® Collagen Peptides
  • 1-2 tsp hot sauce
  • 1 lime, juiced


  1. Mix together VITAL PROTEINS Collagen Peptides, mashed avocado, hot sauce (adjust to taste) and the lime juice until smooth. 

  2. In a large pan, add your bacon and cook it until crispy. Set it aside to cool down and crumble into small pieces. 

  3. Add the butternut squash to the pan and cook on a medium heat until soft. Add the sliced courgette and continue to cook until the vegetables begin to brown.  

  4. In the same pan, add the greens and sauté until just wilted.

  5. Evenly stir in the crumbled bacon and season with salt and pepper.  

  6. In another pan, lightly fry the eggs on a medium-high heat.  

  7. Once the eggs are done, separate the veg into two dishes and add the egg and the slice avocado. 

  8. Finish with a drizzle of the homemade collagen rich sauce and top with coriander or microgreens, as desired.
